Hello Friends & Happy Fall!~

It is a glorious time of year, with the joy of going to the pumpkin patch, the changing of leaves and getting outdoors for a Fall hike. The picture to the right is actually a hike from last year enjoying Silver Creek Falls here in Oregon.

This weekend, I can’t wait to enjoy the pumpkin patch with friends, the fun corn maize and oh those yummy treats they have. How are you enjoying the Fall season?

What are some of your favorite go-to activities this time of year? What plans do you have still to enjoy Fall?

Here are a few budget friendly ideas to help you plan and fill you with some much needed fun and joy!

  • Decorate the porch or patio.

  • Go to the pumpkin patch.

  • Go through a corn maze and/or haunted corn maze.

  • Take a Fall nature drive through the countryside

  • Visit a farmer’s market

  • Gather friends for a Fall hike/nature drive.

  • Pick apples and make a tasty apple treat.

  • Host a game night and carve pumpkins together.

  • Do a fall scavenger hunt

  • Host a small group of friends for a harvest party.

  • Create a new recipe with all things pumpkin spice.

  • Decorate the home

  • Make Homemade DIY Fall pot-pourri

  • Hit up the local store, goodwill or dollar store for a puzzle or painting project

  • Save $ by going to the library and pick up books

  • Make a homemade a pumpkin spiced chai tea.

  • Fall crafts (Dollar Store has ton of great crafts for just a $1.00)

  • Get a fall adult coloring book, get artsy and creative.

Fall Gluten Free Pumpkin Spiced Granola

Ingredients:

3 Cups Gluten Free Oats

1 TB Pumpkin Spice

1 TB Vanilla

1 TB Cinnamon

1 TB Salt

1/2 melted coconut oil or oil of choice

1/2 Cup nuts (pumpkin nuts, sliced almonds or walnuts are a splendid choice)

1/4 Cup organic brown sugar or organic maple syrup

1/2 cup dried cranberries or dried fruit of choice.

Directions

  • Pre-heat oven to 300 Degrees

  • In a large mixing bowl, mix together pumpkin spice, vanilla, cinnamon, salt and oil.

  • Then add in the oats, nuts and choice of sugar or syrup.

  • Once mixed together use a large cookie sheet.

  • Use wax paper to line the pan before cooking the granola.

  • Bake for 15-20 Mins.

  • Once baked then add in your dried fruit of choice as it keeps from burning.

I sprinkle some granola on my Greek yogurt which is a great energy packed and healthy breakfast or snack on the go.
